This creamy and vegetable filled turkey soup with rice is a delicious comfort food and a great recipe for using up leftover turkey.

– olive oil – onion – carrots – bell pepper – celery stalks – turkey or chicken broth – 1 can coconut milk – 1 cup rice – seasoning – leftover turkey

Pressure cook for 5 minutes and let the pressure release naturally for 10 minutes.
