Italian Ricotta Cookies

These soft Italian ricotta cookies are perfect for Christmas! Ricotta cheese makes these a tender and delicate cookie that will melt in your mouth.

Use a mixer to beat the butter and sugar with the lemon zest until it is smooth and creamy. Then mix in the ricotta cheese, vanilla and eggs.

Mix in the flour, baking soda and salt into the bowl. Then wrap the dough in plastic wrap and chill for 2 hours.

Use a cookie scoop to make 1 inch balls of cookie dough. Put them on cookie sheets and bake for 9-11 minutes.

Let the Italian Ricotta cookies cool completely. Then mix the melted butter, powdered sugar, vanilla and milk until smooth and creamy.

Dip the Italian ricotta cookies in the icing and add red and green colored sprinkles for Christmas.
