LEG OF LAMB

INSTANT POT

Rosemary and garlic flavor the leg of lamb which is cooked with carrots and potatoes for a complete meal, perfect for Christmas or Easter.

HOLIDAY MEAL

INGREDIENTS

– 3-4 pound leg of lamb – 1 teaspoon salt – 1 teaspoon pepper – 2 Tablespoons rosemary – 2 Tablespoons olive oil – 1 cup chicken broth – 3 carrots, sliced – 1 onion, sliced – 2 pounds small potatoes

STEP 1

Season the lamb with salt, pepper and rosemary. Then brown on saute in Instant Pot.

Take the lamb out and deglaze with broth. Then add the onions and carrots.

Put the lamb back in and seal the Instant Pot. Pressure cook on high 30 minutes.

STEP 4

Take the lamb out to rest. Add the potatoes to broth and veggies in the Instant Pot and set it for 8 minutes high pressure.

Slice the lamb and serve it with the potatoes and carrots.
