Mexican Rice Recipe

This Mexican rice recipe is an easy one pot meal that makes a delicious side dish and goes well with tacos, burritos, refried beans!

Turn an Instant Pot to saute. Add olive oil, add diced onion and cook, stirring, for 5 minutes to soften.

Add garlic, rice, spices, tomatoes and tomato sauce to the pressure cooker. Stir to mix everything together.

Put the lid on the pressure cooker and on the Rice setting for 8 minutes or use Manual mode for 8 minutes.

Let the pressure release naturally for 5-10 minutes. Then release the rest of the pressure and serve topped with coriander.
