MINI PAVLOVA

These elegant mini pavlova are filled with lemon curd and topped with cream and berries.

STUNNING DESSERT

INGREDIENTS

– 6 egg whites – 2 cup sugar – 2 teaspoons cornstarch – 1/2 Tablespoon lemon juice – 1/2 teaspoon almond extract   Topping – lemon curd – 1 quart raspberries – 1 quart blueberries – 1 pint heavy whipping cream – 2 Tablespoon sugar

Step 1

Whip the egg whites until soft peaks form.

Step 2

Add the sugar and beat until stiff peaks form. Stir in the lemon juice, almond extract and cornstarch.

Step 3

Put the meringue in a pastry bag with a piping tip.

Step 4

Pipe the meringue onto the parchment paper, leaving a hole in middle for filling.

STEP 5

Bake the meringues for 1 hour, then let them cool overnight in the oven.

SteP 6

Fill them with lemon curd.

SteP 6

Pipe whipped cream on top and garnish with fresh fruit.
