PEPPERMINT MERINGUES COOKIES

Make these delicate peppermint meringue cookies with the look and flavor of candy canes!

Whip egg whites, peppermint extract, cream of tartar and salt on low speed until soft peaks form.

Gradually add the sugar and beat on high until stiff peaks form.

Add stripes of food coloring to a pastry bag with a large star tip.

Fill the bag with meringue mixture and pipe cookies onto a parchment paper covered baking sheet.

Bake 90 minutes, then turn the oven off, crack the door open and leave the peppermint meringue cookies inside to cool.
