Potato Soup Recipe

This recipe for Potato Soup is creamy and delicious, yet it is quick and easy to make.

Potato soup is a combination of potatoes and vegetables, topped off with all your favorite baked potato toppings.

Add the olive oil and the bacon to an Instant Pot. Cook the bacon for 7-8 minutes until brown, then remove and set aside for later.

Saute leeks in the bacon grease in the pressure cooker for 5 minutes.

Add potatoes, broth, salt, thyme and garli. Pressure cook 8 minutes on high.

Mash the potatoes and stir in some cream. Garnish the potato soup with bacon and chives.
