INGREDIENTS

- 2-3 beets, any color – 1/2 cup  vinegar – 1/2 cup water – 1/4 cup onion, sliced – 4 peppercorns – 3 cloves – 2 Tablespoons sugar – 1 cinnamon stick – 1/4 teaspoon salt

Steam the beets in the Instant Pot or roast them in the oven.

Let the beets cool, then rub the skins to peel. Slice the cooked beets and put them in a glass jar.

Combine the water, vinegar, salt, sugar and spices and heat.

Pour the brine over the jar of beets and add a lid.

Refrigerate! You can eat these beet pickles right away but they taste best after 3 days.
