These potatoes from Syracuse are creamy and delicious! Small potatoes are boiled with salt and drizzled with butter for a flavor explosion!

This is a simple recipe, but the potatoes are the creamiest you'll ever taste! The salt raises the temperature needed to boil water, so the starch inside the potatoes becomes creamier.

INGREDIENTS

Small potatoes Salt - lots and lots of salt Melted butter for serving

STEP 1 Put 3 quarts of water in a large pot. Add 2 cups of salt. Yes, that is a lot of salt! Bring the water to a boil.

STEP 2 Once the water boils add the potatoes to the pot. Continue to boil for 15-20 minutes.

STEP 3 The potatoes are done when a fork goes in easily. Dump them in a colander. As the hot water evaporates a little salt will crystallize on the outside.

Serve them with melted butter.
