Scandinavian Almond Cake

Traditional Scandinavian almond cake has a light and spongy texture and is delicious with powdered sugar or berries.

Use a Rehrucken/Almond Cake Loaf Pan for this cake. Or   double the recipe and bake it in a bundt cake pan instead

Whisk the sugar, milk, egg and almond extract.

Stir in the baking powder and flour.

Whisk in the melted butter.

Pour the batter in a greased cake pan.

Bake for 40-50 minutes. Leave the cake in the pan until completely cooled.
