SPECULOOS

Speculoos are traditional biscoff cookies and a holiday favorite popular in Europe.

The cookies are made with either cookie stamps or a patterned springerle rolling pin.

Cream the butter and sugar in a mixer. Then add the egg and vanilla and mix.

Mix the spices, baking soda and salt with the flour and add to the mixer. Mix well, then refrigerate the dough for 1 hour.

Roll the chilled speculoo dough into 1 inch balls.

Use a cookie stamp to flatten the balls. Keep the cookie stamp well floured.

Sprinkle the tops of the speculoos with cinnamon sugar, then bake.

These speculoos cookies are thin and crunchy and delicious. Perfect for Christmas!
