Hearty baked potatoes are filled with mashed potatoes, sour cream and cheese, then  topped with bacon and chives.

Use an air fryer and you can cook these stuffed potatoes in just 10 minutes! Or bake them in oven in 20 minutes.

This recipe starts with already baked potatoes. Swipe up learn how to make baked potatoes in the air fryer!

STEP 1

Cut the baked potatoes in half and scoop out the insides. Leave the potato skin intact.

Mash the potato with melted butter, sour cream and half of the cheese.

STEP 3

Spoon the filling back into the potato shells. Mound it up if you need to!.

STEP 4

Air fry for 8 minutes or bake in the oven for 20 minutes.

STEP 5

Sprinkle cheese and bacon on top and air fry for 2 more minutes or bake for 5 min.

You can stuff the potatoes ahead of time, refrigerate and cook quickly when it is time for dinner. Top them with chives or sour cream!
