Zucchini Pickles

Extra zucchini?

Make these easy refrigerator pickles!

STEP 1:

Thinly slice a zucchini.

STEP 2:

Add a couple sprigs of dill to a glass jar. Then fill the jar with zucchini slices.

STEP 3:

Combine 3/8 cup vinegar and 3/8 cup water in a sauce pan.

STEP 4:

Add 1 clove minced garlic, 1/2 Tab. salt, 1/2 teas. peppercorns and 1/2 teas. mustard seeds.

STEP 5:

Heat the brine for a few minutes until the salt dissolves completely.

STEP 6:

Pour the brine over the zucchini in the jar.

STEP 7:

Add a lid and refrigerate the zucchini pickles for 24 hours.
