Alternate green zucchini with yellow squash for a simple side dish that looks elegant!
– zucchini – yellow squash – olive oil – Parmesan cheese – panko bread crumbs – salt and pepper to taste
Slice the squash into rounds about 1/4 inch thick.
Layer the slices in a dish, alternating colors.
Fill the dish with slices, making concentric circles in a circular dish or alternating rows in a rectangular one.
Drizzle with olive oil, then sprinkle with breadcrumbs and cheese.
Bake for 25 minutes until the top is lightly browned.
