Lighter Pork Chop and Stuffing Skillet

  • 1 Tablespoon Mazola┬« Cooking Oil
  • 4 thin bone in pork chops
  • salt and pepper to taste
  • 6 oz turkey or chicken sausage
  • 1 red pepper chopped
  • 1 onion chopped
  • 1 apple peeled and chopped
  • 2 stalk of celery sliced
  • 1 box stuffing mix
  • 1 1/4 cup water


  • Preheat the oven to 350 F.
  • Heat an oven proof skillet over medium heat.
  • Sprinkle the pork chops with salt and pepper.
  • Add the corn oil to the skillet and brown the pork chops for about 2 minutes on each side, until they are lightly brown.
  • Remove the pork chops, cover and set aside to keep warm.
  • Add the sausage to the skillet and stir until it is no longer pink.
  • Add the red pepper, onion, apple and celery to the skillet with the sausage cook for 5 minutes to soften the vegetables.
  • Remove the skillet from the heat. Add stuffing mix and water and stir until well mixed.
  • Arrange the pork chops on top of the stuffing mix, cover the skillet with foil and bake for 10-15 minutes, until pork chops are cooked through and no longer pink.
