Instant Pot Pork Loin with Apples and Mashed Potatoes

Ingredients
2Tablespoonbutter
1.5poundSmithfield All Natural Boneless Loin Filet
2teaspoonrosemary
2teaspoonfennel
salt and pepper to taste
3apples
1/2cupapple juice
6Potatoes
1/4cupbutter
1/4 cupmilk
rosemary sprigs
cinnamon
Instructions
Put the Instant Pot on Saute and melt the butter.
Season the pork with rosemary, fennel, salt and pepper. Brown the pork loin on all sides, taking about 4 minutes.
Peel and slice the apples while the pork browns.
Remove the pork to a plate and add the apples. Saute for 4 minutes.
Peel and halve the potatoes while the apples cook.
Return the pork to the Instant Pot on top of the apples and add the apple juice.
Put the cut potatoes in a steamer basket and set it on top of the pork.
Hit the Keep Warm/Cancel button of the Instant Pot and put the lid on. Set it for Manual mode, and use the down button to change the time to 15 minutes. (adjust the time if your have a larger pork loin)
When the timer goes off manually release the steam. Then take the pork roast out and use a meat thermometer to make sure it has reached a minimum of 145 F. Garnish it with rosemary and set aside to rest for a few minutes.
Put the potatoes in a bowl and mash with the butter and milk.
Use a slotted spoon to remove the apples and sprinkle with a little cinnamon.
