Easy Seafood Pasta with Calamari, Shrimp, Scallops and Tomatoes

Ingredients

olive oil

cherry tomatoes

pureed tomatoes

Crushed red pepper

teaspoon
salt
½
cup
chicken broth
½
lb
calamari
½
lb
scallops
1
lb
shrimp

Tablespoon
fresh parsley
Instructions
Heat the olive oil in a skillet over medium heat.
Heat a large pan of salted water over high heat and cook the pasta, following package directions.
Sautee the garlic for 1 minute, then add the cherry tomatoes.
Cook, stirring, for 5 minutes until the tomatoes start to break down.
Add the pureed tomatoes, red pepper and salt. Stir to mix.
Add in the chicken broth and ½ c of pasta water and cook for 2 minutes.
Stir in the calamari and cook for 1 minutes.
Add the scallops and let cook for 2 minutes, stirring.
Add the shrimp and cook until no longer pink.
Stir the drained pasta into the pot and serve immediately, sprinkled with parsley.
