Mango Jalapeno Ham Glaze

Ingredients

  • 2 mangoes
  • 1/4 c. water
  • 2 Tablespoon sugar
  • 1 jalapeno
  • 1 teaspoon lemon juice

Instructions

  • Cut and dice the mangoes. Combine them with the water and sugar in a small saucepan and bring to a boil.
  • Reduce heat and simmer until the mangoes lose their shape and the sauce thickens, about 45 minutes. Add more water if it gets too thick.
  • Slice and de-seed the jalapeño and add to the mango mixture, along with 1 t. of lemon juice.
  • Cook for another 5 minutes.
  • Brush or spoon the glaze on the ham during the last 10 minutes of the ham's cooking time.
