Sweet Potatoes

Instructions
Preheat the oven to 400.
Peel the sweet potatoes and cut them into 1 inch cubes.
Peel and core the pears and cut them into 1 inch cubes.
Dice the shallots finely.
Combine the sweet potatoes, pears, shallots, olive oil, salt, pepper and thyme in a bowl and mix well.
Spread the mixture in a 8 x 20 casserole dish and roast for 25-30 minutes until the vegetables are tender.
