These Guinness Cookies are a perfect treat for St. Patrick's Day, and make a nice twist on traditional chocolate chip cookies.

Ingredients

1bottle Guinness stout
1/4cupbrown sugar
2 3/4cupflour
5Tablespooncocoa powder
1teaspoonbaking powder
1teaspoonbaking soda
1teaspoonsalt
1cupbutter
1cupsugar
1/2cupbrown sugar
2large eggs
1Tablespoonvanilla extract
1cupwhite chocolate chips
1cupdark chocolate chips
Instructions
Combine the Guiness and 1/4 c. brown sugar in a saucepan. Cook over medium heat, stirring for about 15-20 minutes until it has reduced and becomes thick.
1 bottle Guinness stout, 1/4 cup brown sugar
Put the Guiness syrup aside to cool a bit.
Preheat the oven to 325 F.
Mix the flour, cocoa, baking powder, baking soda and salt together.
2 3/4 cup flour, 5 Tablespoon cocoa powder, 1 teaspoon baking soda, 1 teaspoon salt
In a mixer bowl cream the butter with the white and brown sugar until well mixed.
1 cup butter, 1 cup sugar, 1/2 cup brown sugar
Add the eggs and vanilla and beat well.
2 large eggs, 1 Tablespoon vanilla extract
Add the dry ingredients and the Guiness mixture and mix.
Stir in the chocolate chips.
1 cup white chocolate chips, 1 cup dark chocolate chips
Roll the dough into balls and bake on parchment lined cookie sheets for 12-15 minutes.
