Put the egg roll wrappers, chicken filling and small bowl of water on a cutting board.
1 package egg roll wrappers
Take one egg roll wrapper off and place it on the cutting board with the corner facing down, towards you.
Put 1/4 cup of filling near the top corner of the egg roll wrapper and fold the top corner down over it.
Roll it down, folding the left and right corners in as you go. Stop when only the bottom corner is left.
Dip your fingers in the water and wet the bottom corner of the wrapper. Then roll the egg roll over it.
Put the completed egg roll on a baking sheet and make the rest.
Once all the filling is gone preheat the air fryer to 400 F for 3 minutes.
While it preheats spray the egg rolls with oil or cooking spray so they brown nicely.
Put the egg rolls in the air fryer basket, being sure to leave space for the air to circulate. You will probably have to cook them in 2-3 batches, depending on the size of your air fryer.
Cook them at 400 F for 6-8 minutes, flipping them over with tongs halfway through.
If they aren't golden brown enough after 8 minutes return them to the air fryer for another 2 minutes and check them again.
