Rice is flavored with lemon and dill and quickly cooked in a pressure cooker for a quick and easy side.

Ingredients
1Tablespoonvegetable oil
1small oniondiced
2cupswhite long grain rice
2cupsbrothchicken or vegetable
2tablespoonlemon juiceor juice of one lemon
1teaspoonsalt
1teaspoondill seedoptional

Instructions
Put the Instant Pot on Saute and let it heat for 2 minutes. Then add the oil and the onion. Cook, stirring the onion until it starts to soften, about 4 minutes.

Add the rice to the Instant Pot. Cook, stirring, for 2 minutes to toast the rice grains slightly.
2 cups white long grain rice
Turn the Instant Pot off.
Add the broth to the Instant Pot to deglaze it. Scrape the bottom of the Instant Pot with a spoon to make sure there are no bits of onion stuck to the bottom.

Add the lemon juice, salt and dill seed. Stir to mix.
Put the lid on the Instant Pot, making sure the sealing ring is in place and the pressure valve is closed. Set it on Manual, high pressure for 5 minutes.
It will take about 10 minutes for the Instant Pot to reach pressure. Once it has finished cooking let the pressure release naturally for at least 10 minutes. Then release any remaining pressure, stir and serve the rice.

I make and test my recipes in a 6 quart Instant Pot. Using a different brand or size pressure cooker might affect your results.
