Chicken cooks quickly in the air fryer and is topped off with fresh mozzarella cheese and red, ripe tomatoes for a delicious, healthy and easy dinner.

Ingredients
4chicken breast cutletsabout 1 pound
1teaspoonItalian seasoning
1teaspoonsalt
1/2teaspoonpepper
4slicesfresh mozzarella cheese4 ounces
1large tomato

Instructions
Place the chicken breast cutlets on a plate and pat them dry with a paper towel. Then sprinkle them with the Italian seasoning, salt and pepper.

Place them in the air fryer basket and cook at 380 F for 10 minutes. Use tongs to flip them over after 5 minutes. Make sure not to crowd the chicken in the air fryer basket, leave room for the air to circulate.
While the chicken is cooking slice the cheese and tomato.
4 slices fresh mozzarella cheese, 1 large tomato
Once the air fryer is done use a thermometer to check the chicken and make sure it has reached 165 F. Put it back in for another minute or two if it is not done.
Leaving the chicken in the basket top each chicken breast with a slice of mozzarella cheese and a tomato. Use tongs or a fork to do this and be careful not to touch the sides of the basket, they will be very hot.
Put the basket back in the air fryer and set it on 200 F for 1 minute to melt the cheese. After 1 minute keep the basket closed for another minute. Then take it out and serve the chicken caprese.
Garnish the chicken with basil and balsamic vinegar if desired.

Notes
Fresh ripe tomatoes are essential for this recipe. If tomatoes aren't in season use grape or cherry tomatoes since they have better flavor than out of season tomatoes.
If you are using full sized boneless chicken breasts instead of chicken breast cutlets increase the cooking time to 20 minutes.
