Pumpkin Chocolate Chip Muffins
This delicious pumpkin chocolate chip bread is a fall staple recipe.

Ingredients

all-purpose flour

teaspoon
baking powder
1
teaspoon
pumpkin pie spice ** see notes

teaspoon
baking soda

salt

ground cinnamon
1
cup
canned pumpkin puree
not pumpkin pie filling
1 ¼
cups
granulated sugar
⅓
cup
oil
vegetable or canola
2
large eggs
room temperature
1
cup
semi-sweet chocolate chips
Instructions
Preheat oven to 350 degrees F and put liners in the muffin tin.
In a medium bowl, whisk together flour, baking powder, pumpkin pie spice, baking soda, salt and cinnamon. Set aside.
1 ½ cups all-purpose flour,
1 teaspoon baking powder,
1 teaspoon pumpkin pie spice ** see notes,
½ teaspoon baking soda,
½ teaspoon salt,
1 teaspoon ground cinnamon
In a large bowl, beat together pumpkin, sugar, oil and eggs until well combined.
1 cup canned pumpkin puree,
1 ¼ cups granulated sugar,
⅓ cup oil,
2 large eggs
Gradually add the bowl of dry ingredients to wet ingredients until well mixed and all the flour is mixed in.
Gently fold in the chocolate chips with a spatula.
1 cup semi-sweet chocolate chips
Put the into the muffin liners using a cookie dough scoop or large spoon. Fill each 2/3 full.
Bake at 350 degrees F for 15-20 minutes or until a toothpick inserted in the center comes out clean.
Cool completely on a wire rack
Store the muffins in airtight container for 2-3 days.
Notes
You can also bake these in a mini muffin pan, for 8-10 minutes.
If you don't have pumpkin pie spice you can substitute 1 teaspoon of cinnamon. Or make your own with my
