This simple chickpea salad is loaded with fresh summer vegetables. It is gorgeous, fresh, vegan, gluten free and super easy to make!

Ingredients
Salad
15.5ounce 2 cans chickpeasdrained and rinsed
1cupparsleychopped
1cucumberchopped
1bell pepperchopped
2cupsgrape or cherry tomatoesdiced
Dressing
1lemonzested and juiced or 2 Tablespoons lemon juice
2clovesgarlic
3Tablespoonsolive oil
1/4teaspooncumin
1/2teaspoonsalt
1/2teaspoonpepper
Instructions
Drain and rinse the chickpeas.

Chop the parsley, cucumber and bell pepper into bite size pieces. Slice the tomatoes into quarters or halves. Mix the chickpeas, parsley, cucumber, bell pepper and tomatoes together in a big bowl.

Zest and juice the lemon and mince the garlic. In a small bowl whisk together the lemon juice, lemon zest, olive oil, cumin, garlic, salt and pepper.
