Slice them thinly into 1/8 inch thick slices. A mandolin is excellent for making uniform slices, but a knife works too.
Put the slices in a bowl of cold water and let them sit for 15 minutes. This step is optional, but recommended for the crispiest chips.
Preheat the air fryer at 350 degrees F.
Drain the slices and pat them dry. Then put them in a bowl and add the paprika, salt and pepper. Drizzle with oil and toss to mix.
Put them in the air fryer in a single layer. Air fry them at 350 degrees F for 10 minutes.
Pull the basket out and flip the slices over. Then air fry for another 5-10 minutes, until they have reached the crispiness you like.
Notes
You can make these ahead of time and soak the sweet potatoes, toss them with oil and spices. Then store them in the refrigerator for 2-3 days, until you are ready to cook them.Thinner slices will cook more quickly. You can change up the spicing and use taco seasoning, cinnamon, curry powder or other favorite spices to flavor them.
