These ruby chocolate chip cookies have ruby chocolate, pistachios, and dried raspberries combined in a chocolate cookie base!

Ingredients
1/2cuppistachioschopped
1/2cupfreeze-dried raspberrieslightly crushed
10tablespoonsunsalted buttersoftened
1cupbrown sugardark or light
1egg
1teaspoonvanilla extract
1 1/4cupflour
1/4cupdark chocolate cocoa powder
3/4teaspoonbaking soda
1/2teaspoonsalt
3/4cupruby chocolate chipsplus 1/4 cup extra to decorate
Instructions
Preheat the oven to 375 degrees F.
Chop the pistachios. Put the freeze-dried raspberries on a cutting board and use the flat side of a large knife to crush them.

Combine the butter and brown sugar in the bowl of a mixer. Beat on medium speed until creamy and fluffy.

Add the egg and vanilla and mix well.

Mix flour, cocoa powder, baking soda, and salt in a medium bowl.

Add the flour mixture to the mixing bowl and beat on low speed until just combined.
Stir in the ruby chocolate chips, pistachios, and raspberries.

Roll the dough into 1 1/2 to 2-inch balls. Place the balls on parchment-lined baking sheets. Leave about 2 inches in between the cookies.
Bake in the preheated oven for 12 minutes until the edges are set. Take the cookies out of the oven and, if desired, place 3-4 chips on top of the cookies. Let them cool on the baking sheets for 10 minutes, then remove to wire racks.
Notes
The pink color of the chips will fade as they bake. So reserve some to place on top of the cookies after baking for a fantastic look.
You can dice a few ruby chocolate bars instead of using the chips.
Don't overbake the cookies - underbaking gives them a softer, chewier texture in the middle.
Use white or dark chocolate chips if you can't find ruby chocolate.
