Instructions
Add quinoa and salt to 1 1/2 c. of water in a saucepan and bring to a boil, then reduce heat and simmer until all the water is evaporated. Cool.

Chop the carrot, red pepper, cucumber and cilantro. Toss them, along with the sugar snap peas and sunflower seeds with the quinoa.

Combine the lemon juice, olive oil and salt. Mix well and pour over salad.
