Chicken with Tomatillos Recipe

tomatillos
peeled and sliced

teaspoon

tomatoes

Instructions
Heat the oil in a sauce pan. Then mix the chicken with the cumin, chili powder and pepper. Brown in the oil for 2-3 minutes until no longer pink, and remove from pan and set aside.
1 lb chicken,
1 1/2 teaspoon cumin,
2 teaspoon chili powder,
1/4 teaspoon pepper,
1 Tablespoon olive oil
Brown 1 cup chopped onions in pan for 2-3 minutes. Then add garlic and cook 1 minute more.

1 clove garlic
Add the cubed tomatillos and salt and stir well. After 1 minute return the chicken to the pan. Cover and simmer on low for 10-15 minutes.
2 lb tomatillos,
1/2 teaspoon salt
Remove from heat and stir in the tomatoes. Top with coriander sprigs and serve with rice.
