Ingredients
1cucumberpeeled and sliced
1/2cupred pepperchopped
1/4cupred onion or 2 scallionschopped
2clovesgarlicminced
3cupcoleslaw mixshredded
2cupsleftover chicken or canned chicken
1/4cupfresh corianderoptional
3Tablespoonlow sodium soy sauce
2Tablespoonolive oil
4teaspoonsugar
2Tablespoonrice vinegar
4sandwich wraps or tortillas
Instructions
Chop up the cucumbers, red pepper, onion and garlic. Combine with the coleslaw mix in a big bowl.
1 cucumber, 1/2 cup red pepper, 1/4 cup red onion or 2 scallions, 2 cloves garlic, 3 cup coleslaw mix
Shred or chop the chicken and add it to the bowl. Add the coriander if using.
2 cups leftover chicken or canned chicken, 1/4 cup fresh coriander
Mix the soy sauce, olive oil, sugar and rice vinegar together in a small bowl, then pour over the veggies and meat. Stir to combine and refrigerate until ready to serve.
