Cupcakes
1/2cupbutter
1/2cupbrown sugar
1/4cupwhite sugar
2eggs
2teaspoonvanilla
1 1/2cupflour
1teaspoonbaking powder
2teaspooncinnamon

1/2cupmilk
2apples

8ozcream cheeseroom temperature
1/2cupbutterroom temperature
4cuppowdered sugar

Caramel Sauce
1/2cupbutter
1cupbrown sugar
1 1/2teaspoonbaking soda
1/2cuphalf and half
Instructions
Cupcakes
Preheat the oven to 350 F.
Peel, chop and core the apples.
Cream the butter, white sugar and brown sugar in a mixing bowl until well combined.
Add in the eggs and vanilla and mix well.
Combine the flour, baking powder, cinnamon, nutmeg and salt in a small bowl.
Add the flour mixture and the milk to the sugar mix and mix until just combined.
Fold in the chopped apples.
Spoon the batter into cupcake tin and bake for 18-20 minutes.
Frosting
While the cupcakes are baking and cooling get out the cream cheese and butter and let them come to room temperature. The frosting will be smoother if they are not chilled.
When the cupcakes are cool combine the cream cheese and butter and mix at high speed until smooth.
Add in the powdered sugar, nutmeg and cinnamon and mix until the frosting is spreadable. If it is too thick add a few tablespoons of milk or cream.
Pipe onto the cupcakes for a swirly look.
Caramel Sauce
Melt the butter in a saucepan over low heat.
Add the remaining ingredients and bring the sauce to a rolling boil. Cook for 5-7 minutes.
Remove from heat and let cool to room temperature.
