Put the dry brownie mix in a large microwave safe mixing bowl. Place in microwave and heat in 30 second increments stirring between each for about 1 ½ minutes or until temperature is 160 degrees F. Use an instant read thermometer to check the temperature.
19 ounce 13x9 in pan size brownie mix
Take the bowl out of the microwave and add in corn syrup, chocolate syrup and water.
2 tablespoon chocolate syrup, 2 tablespoon light corn Syrup, ¼ Cup Water
Stir until well mixed and smooth, making sure to get rid of any lumps.
Scoop out 1 tablespoon of brownie mixture at a time and roll into a ball. Slightly dampening your hands for rolling keeps the batter from sticking to them.
To decorate with sprinkles:
Place the sprinkles in a shallow dish. Roll in sprinkles to coat. Place on plate or baking sheet.
Assorted sprinkles
To decorate with melted chocolate:
Chill the brownie bites in the refrigerator for 15 minutes.
2 cups Chocolate chips - semi-sweet
Line a baking sheet with parchment paper. Add chocolate chips and coconut oil to a microwave safe bowl. Heat the chocolate in 20 second intervals, stirring after each. Keep heating until the chocolate is smooth and melted.
2 Tablespoons coconut oil
Put each chilled ball on a fork and dip in chocolate. Let excess chocolate drip off, then put the it on the line baking sheet.
Notes
Which ever way you decorate them chill them for an hour before serving for the best taste.
Heat treating the brownie mix in the microwave is easy and takes only 2-3 minutes total. Not doing it would increase your risk of food poisoning, so don't skip it!
These will keep in an airtight container in the refrigerator for about 1 week. They also freeze well, although they freeze better if they are coated in sprinkles not chocolate.
