Key Ingredients

Brownie mix – Any kind of brownie mix will work, just make sure the box is the 19 ounce size which makes a 13 x 9 size pan. I usually get fudge brownie mix.

Chocolate syrup – Use chocolate syrup not hot fudge! Syrup or sauce has a thinner consistency which will help you form the mixture into balls.

Corn syrup – Light corn syrup will sweeten the mixture and help give it the right consistency for making truffles.

Decorations – You can decorate these with seasonal sprinkles or dip them in melted chocolate chips, whatever you prefer.

How to Make These Brownie Truffles

1. Heat treat the flour

This is a no bake dessert and the flour mixture will not be baked before eating. So to ensure that it is safe to eat you need to heat treat it. 

This sounds a little intimidating, but is actually very easy to do in the microwave. Put the brownie mix in a large microwave safe bowl.

Heat it for 30 seconds, pull it out and stir it, and check the temperature. You can use an instant read thermometer, just like you’d use for checking meat temperature.

Continue to heat, stir, and check until the temperature reaches 160 degrees F. This will probably take about 90 seconds of total heating.

2. Mix the batter

Stir the chocolate syrup, corn syrup and water into the bowl. Stir until it is well mixed and smooth, making sure to get rid of any lumps.

3. Form the brownie bites

Scoop out about 1 tablespoon of the mixture at a time and roll it into a ball. Using a small cookie scoop will help you get evenly sized balls.

Roll the dough between your hands to make them nicely rounded. Use a little bit of water to dampen your hands so the batter doesn’t stick.

4. Decorate with sprinkles

The easiest way to decorate these brownie balls is just to roll them in sprinkles. The sprinkles will stick to the outside and make them look fun and festive. Kids love to help roll them around brightly colored sprinkles!

Put the sprinkles on a plate and roll the balls around until they are completely covered. Then put them on a plate or baking sheet and repeat with the rest of the batter.

5. Decorate with chocolate

Alternatively you could finish these with a layer of melted chocolate to make them even more chocolatey. More chocolate is always a great choice! For dipping the balls need to be chilled first, so put them in the refrigerator for at least 15 minutes to allow them to firm up.

Line a baking sheet with parchment paper. Add chocolate chips and oil to a microwave safe bowl. Heat the bowl for about 20 seconds at a time, then stir, until it is completely melted and smooth.

Put each chilled ball on a dipping fork or other small fork and dip it into the bowl of chocolate. Let excess drip off, then put the truffle on the baking sheet. Add sprinkles to the coating too if you like, or a dusting of sparkling sugar.

How to Serve

Which ever way you decide to decorate these brownie bites they should be chilled before serving. About an hour in the refrigerator is best. Chilling them not only firms up the toppings it also helps reduce any graininess in the batter giving them a smooth and sweet flavor.

How to Store

These will keep in an airtight container in the refrigerator for about 1 week. They also freeze well, although they freeze better if they are coated in sprinkles not chocolate.

Do I have to use boxed brownie mix?

Homemade brownie mix also works to make these brownie bites. Using a boxed mix is just a way to save time.

Can I freeze brownie bites?

Yes, freeze them by placing them in a single layer in a bag or freezer container. They keep in the freezer for 1-2 months.

Do I have to heat treat the raw flour?

Yes! Heat treating the brownie mix is easy and takes only 2-3 minutes total. Not doing it would increase your risk of food poisoning, so why take a risk?

Ingredients
 

  • 19 ounce 13×9 in pan size brownie mix
  • 2 tablespoon chocolate syrup
  • 2 tablespoon light corn Syrup
  • ¼ Cup Water

For decorating

  • Assorted sprinkles

For dipping

  • 2 cups Chocolate chips – semi-sweet milk chocolate or dark chocolate chips
  • 2 Tablespoons coconut oil

Instructions

  • Put the dry brownie mix in a large microwave safe mixing bowl.  Place in microwave and heat in 30 second increments stirring between each for about 1 ½ minutes or until temperature is 160 degrees F. Use an instant read thermometer to check the temperature.

  • Take the bowl out of the microwave and add in corn syrup, chocolate syrup and water. 
    2 tablespoon chocolate syrup, 2 tablespoon light corn Syrup, ¼ Cup Water
  • Stir until well mixed and smooth, making sure to get rid of any lumps.
  • Scoop out 1 tablespoon of brownie mixture at a time and roll into a ball. Slightly dampening your hands for rolling keeps the batter from sticking to them. 

To decorate with sprinkles:

  • Place the sprinkles in a shallow dish. Roll in sprinkles to coat. Place on plate or baking sheet.

To decorate with melted chocolate:

  • Chill the brownie bites in the refrigerator for 15 minutes.
    2 cups Chocolate chips – semi-sweet
  • Line a baking sheet with parchment paper. Add chocolate chips and coconut oil to a microwave safe bowl. Heat the chocolate in 20 second intervals, stirring after each. Keep heating until the chocolate is smooth and melted.
    2 Tablespoons coconut oil
  • Put each chilled ball on a fork and dip in chocolate. Let excess chocolate drip off, then put the it on the line baking sheet.

Notes

  • Which ever way you decorate them chill them for an hour before serving for the best taste.
  • Heat treating the brownie mix in the microwave is easy and takes only 2-3 minutes total. Not doing it would increase your risk of food poisoning, so don’t skip it!
