Instructions

Add both cans of soup, chicken stock, and onion soup mix to a bowl. Mix until smooth. Stir in the uncooked rice.
1 can cream of chicken soup, 1 can cream of mushroom soup, 2 cups chicken stock, 1 package onion soup mix, 2 cups white rice
Pour everything into the prepared baking dish. Season the chicken with salt and pepper (optional) and place in the middle of the rice mixture.
2 pounds boneless skinless chicken breasts, Salt and pepper
Cover tightly with aluminum foil and bake in the preheated oven for 1 hour and 15 minutes. Don't peek!
Remove from the oven and let sit for 5-10 minutes before removing the foil. Use a meat thermometer to ensure the chicken's internal temperature has reached 165 degrees F.
Slice or shred the chicken and serve.
Notes
Top with crispy fried onions for a delicious texture.
Since the recipe calls for canned soup, which already contains salt, it's best to go easy on the additional salt. Remember, you can always add more later but can't take it away.
With this dish, the magic happens in the slow, undisturbed cooking. Resist the temptation to peek!
