No Peek Chicken Casserole is a classic comfort dish I love for its simplicity and heartiness. The name tells you the key to its tender, flavorful results: the casserole is covered and left to cook undisturbed, allowing the ingredients to combine perfectly.

Juicy chicken, rice, and a blend of soups all come together in one casserole dish for a warm and satisfying meal made with very little effort. The magic happens in the oven, where the steam and heat gently cook the meat, resulting in tender chicken with deliciously flavorful rice.

🥘Ingredient Notes

For exact amounts needed see the recipe card below

  • Boneless chicken breasts: You can also use boneless chicken thighs.
  • Cream soup: I use a combination of cream of chicken and cream of mushroom soup. The soups make a fantastic flavor base. If you’re not a fan of mushrooms, you can substitute them with another can of cream of chicken soup or celery soup.
  • Chicken stock
  • Onion soup mix: This might seem like an unusual addition, but it adds a depth of flavor to the dish. Plus, it helps to season the rice beautifully.
  • Rice
  • Salt and pepper: These are optional. Cream soup and chicken broth have a lot of sodium, so you might not want to add more.

🍴Serving Ideas

When I serve my No Peek Chicken Casserole, I like to keep the sides simple to let the casserole’s flavors shine. Here are some of my favorites.

  • Mixed Greens: A simple mix of lettuce, spinach, and arugula dressed with vinaigrette.
  • Caesar Salad: Romaine lettuce with Caesar dressing, parmesan, and croutons.
  • Garlic Knots: For a flavorful crunch.
  • Steamed Broccoli: Lightly seasoned with salt, pepper, and a squeeze of lemon.
  • Glazed Carrots: A touch of honey enhances their natural sweetness

💭How to Store

Leftovers? No problem! No Peek Chicken casserole stores beautifully. Just let it cool completely, then store it in an airtight container in the fridge. It will stay fresh for 2-3 days. When you’re ready to reheat, pop it in the microwave or back in the oven until warm.

⭐Tips

Be sure to check out the step by step instructions

  • Go easy on the salt. Since the recipe calls for canned soup, which already contains salt, it’s best to go easy on the additional salt. Remember, you can always add more later but can’t take it away.
  • The rice is the bedrock of this dish. It absorbs all the flavors, so good quality long-grain rice is essential.
  • With this dish, the magic happens in the slow, undisturbed cooking. Resist the temptation to peek! The steam trapped in the dish is what cooks the rice. Trust the process and let it do its thing.

📝Reader Questions

Can I use brown rice in this recipe?

Unfortunately, no. Brown rice takes longer to cook than white rice. If you use it, the chicken will be overcooked before the rice is done. So stick with white rice.

Can I add vegetables?

Sure thing! I’ve experimented by adding peas, carrots, and even broccoli. It’s a great way to sneak in those veggies for the kids.

What if I don’t have cream of mushroom soup?

Been there, done that. If you don’t have cream of mushroom, you can substitute it with cream of chicken or cream of celery soup. It will taste great.
