Pile onto soft buns and add a layer of creamy ranch or blue cheese dressing and crunchy celery sticks or coleslaw. It’s a crowd-pleaser perfect for game day parties, family dinners, or something deliciously satisfying and super simple.

My favorite thing about this recipe is its versatility. Once the chicken is ready, you can use it in other ways, not just as sandwiches. The shredded buffalo chicken is a topping for pizzas and salads or even loaded on top of baked sweet potatoes.

In this post, I’ll take you step-by-step through the preparation process, tossing in some of my favorite tips and tricks. So get ready to enjoy one of the easiest recipes around!

🥘Ingredient Notes

For exact amounts needed see the recipe card below

  • Chicken: Use either skinless thighs or chicken breasts here. I like to use thighs — I find they pack a bit more flavor and tenderness. But chicken breasts will do the job just fine if that’s what you have on hand.
  • Buffalo hot sauce: Go with your favorite brand. Or make some homemade sauce.
  • Salt
  • Pepper

🥣How to Make Instant Pot Buffalo Chicken

  1. Pour the Buffalo wing sauce into the Instant Pot.
  2. Sprinkle the chicken with salt and pepper, and add it to the Instant Pot.
  3. Lock that Instant Pot and pressure cook on high for 15 minutes.
  4. Once the timer dings use the quick pressure release function of the pressure cooker. Then take your cooked chicken out, and shred it. If you’ve got a pair of those fancy shredding claws, use them. If not, a couple of forks will do just fine.
  5. Return your shredded chicken to the Instant Pot and stir to mix it with the sauce. If you like your buffalo chicken less saucy, put it in a bowl and add Buffalo sauce to taste.

🍴Serving Ideas

I usually serve Instant Pot Buffalo chicken as sandwiches. Add a crusty roll, some blue cheese on top, and maybe some pickles; you’ve got a hearty meal. But there are other options:

  • Stuff this spicy, tangy chicken into a taco shell, sprinkle with shredded cheese, and drizzle some ranch dressing. Add some lettuce and a dollop of blue cheese dressing, and you’ve got a Buffalo chicken taco night.
  • Serve the chicken as the main course with garlic mashed potatoes and a fresh green salad.
  • Make a Buffalo chicken pizza. Top a pre-made pizza crust with a thin layer of Buffalo sauce, add your shredded chicken, sprinkle some blue cheese, and bake until golden brown.

💭How to Store

This stuff stores well. Place the leftover Buffalo chicken in an airtight container and pop it in the fridge. It’ll stay good for up to 3-4 days. Make sure to reheat it thoroughly before serving.

You can also freeze it. Pack the cooled chicken into freezer-safe bags, squeeze out as much air as possible, and seal. It can stay frozen for up to 3 months. To reheat, thaw it overnight in the fridge and then warm it on the stove or microwave.

⭐Tips

Be sure to check out the step by step instructions

  • The sauce can make or break a buffalo chicken recipe. Use your favorite, and remember the spice level will be determined by the sauce.
  • Either chicken breast or thighs work fine in this recipe. I prefer chicken thighs because they stay moist, but use the one you like.
  • You can reduce the spiciness by decreasing the amount of Buffalo sauce. But in that case, you should add water so that the total liquid in the pressure cooker equals one cup.

📝FAQ

Can I use frozen chicken?

Absolutely! One of the great things about the Instant Pot is that it can handle frozen chicken like a champ. Add 5-10 minutes to the cooking time, and you’re good.

How can I adjust the spiciness?

Control the heat by adjusting the amount of buffalo sauce. Dial down the sauce if you’re serving this to kiddos or heat-sensitive folks. On the flip side, if you love it spicy, serve extra sauce on the side.
