  • Whole chicken: Make sure to clean out the inside of the chicken and throw away the giblets.
  • Dry stuffing mix: A 6-ounce box of any flavor will do. We’re going to mix this in with the chicken drippings.

🥣How to Make Crock Pot Chicken and Stuffing

  1. Dice the carrots, onions and celery. Then put them in the bottom of the cooker. This is the aromatic base for our chicken.
  2. Now, place your cleaned whole chicken on top of the veggies.
  3. Pour the melted butter all over that bird, then sprinkle the seasonings on top.
  4. Put the lid on your slow cooker and set the high timer for 5-6 hours. Now, you can go about your day or run errands while your slow cooker does all the hard work.
  5. When the time is up, remove the chicken and set it on a platter. Cover it with foil and let the chicken rest while you make the stuffing.
  6. Remove all of the liquid and put it in a measuring cup. Return about 1 1/2 cups of it into the slow cooker, along with all the veggies. Add your stuffing mix to the slow cooker, give it a good stir, cover, and let it cook for an additional 10 minutes.
  7. Once the stuffing is done, fluff it with a fork. Now, you can serve your chicken and stuffing however you like. I usually slice the chicken and serve it alongside the stuffing. But you can also put the chicken back in the slow cooker for a pretty presentation.

  • Make sure you don’t leave any stray chicken bones in the cooking liquid when you take chicken out. If the chicken falls apart when you remove it, strain the cooking liquid to avoid unpleasant crunchiness in the stuffing!

Can I use boneless chicken?

Absolutely. It will probably cook a bit faster, so keep an eye on it.

Can I use frozen chicken?

No. Never, and I mean never, put a frozen chicken in your slow cooker. It’s a food safety no-no. Always make sure your chicken is fully thawed before it hits the slow cooker.

What if I don’t have a slow cooker?

No problem! You can also make this recipe in the oven. Roast the chicken at 350°F for about 1 1/2 hours in a deep roasting pan.
 

Why is my stuffing soggy?

Chances are, you’ve added too much liquid or over-packed the stuffing. Measure the liquid and only mix 1 1/2 cups to mix with the stuffing.

Ingredients
 

  • 5 pound whole chicken
  • 2 carrots diced
  • 1 small yellow onion diced
  • 2 celery ribs diced
  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika
  • 6 ounce box stuffing mix Like Stove Top, any flavor

Instructions

  • Clean out the inside of the chicken and throw away the gizzards.
    5 pound whole chicken
  • Dice the carrots, onions and celery. Put them in the bottom of the slow cooker.
    2 carrots, 1 small yellow onion, 2 celery ribs
  • Put the chicken on top of the veggies. Pour the melted butter over the chicken, add the seasonings on top, and rub it all over. Season with salt and black pepper if you want.
    1/2 cup salted butter, 1 teaspoon poultry seasoning, 1 teaspoon paprika
  • Place the lid on and cook on high 4-6 hours.
  • Remove the chicken, set it on a platter, and cover with aluminum foil to keep warm. Pour the liquid from the crock pot into a measuring cup. Return 1 1/2 cups of liquid to the slow cooker along with all the veggies. Discard the additional liquid.
  • Add the box of stuffing mixture to the slow cooker and stir well. Put the lid back on and let cook for another 10 minutes. Fluff with a fork when done.
    6 ounce box stuffing mix
  • Slice the chicken and serve with the stuffing.

Notes

  • You can also cook this on low for 7-8 hours. However, in my opinion the chicken has a better texture when you cook this on high.
  • A 7 or 8 quart slow cooker is necessary to fit the whole chicken.
  • Store any leftovers in an airtight container in the fridge for 2-3 days.
  • You can also make this with skinless chicken breasts, although they will cook a little more quickly, so adjust the time.
