It is always good to have a nice, hot lunch as an alternative to sandwiches. I used to make lunch for my children almost every day, because we homeschooled and I wanted to make sure they got a healthy lunch. But now my oldest is in college, my middle child is in public school and just my son and I are left at home. He complains frequently that I never make lunch anymore now that it is just him, and instead we have leftovers or sandwiches. But it doesn’t make sense to spend a lot of time making a meal for just two of us. This is a quick and easy lunch for us.
My son and I both enjoy quesadillas, so we decided to make Mango Chicken Quesadillas for our lunch. I included the recipe below, but it was very easy to prepare and took less than 10 minutes from start to finish perfect for a quick, hot meal. To start off with I chopped up about 1/3 of a mango. Mangos are nutritious, delicious, and go great with Mexican inspired foods.
Next, I divided the chicken breast between 4 flour tortillas, and topped it with the mango, shredded cheese and some fresh coriander.
I folded the tortillas over and browned them in a frying pan for a few minutes and lunch was ready! My son topped his with sour cream and guacamole, but since I am trying to lose weight I skipped those toppings. Either way it was very tasty, and the coriander and mango went nicely with the chicken and made the quesadilla seem more fancy than just a standard chicken quesadilla. With quick options like this I can make a hot lunch for my son and I more often – or even better have him make the lunch for us!
Mango Chicken Quesadillas
Ingredients
- 1 cup leftover chicken
- 4 flour tortillas
- 1/2 cup cheddar cheese shredded
- 1/2 cup mango diced
- 2 Tablespoon cilantro chopped
- cooking spray
Instructions
- Heat a non-stick skillet sprayed with cooking spray over medium heat.cooking spray
- Peel and chop the mango. Chop the chicken.1/2 cup mango, 1 cup leftover chicken
- Top each tortilla with a quarter of the chicken, mango, cheese and coriander. Fold tortillas in half and brown in skillet 2 at a time. Cook about 2 minutes on each side, flipping once.4 flour tortillas, 1/2 cup cheddar cheese, 2 Tablespoon cilantro
