I am always looking for quick ways to get a balanced meal on the table.  My family and I are running from one activity to another, and many nights there is only a small window of time for us to make an eat dinner.  Last week I made this pasta and chicken dinner using Philly Cream Cheese to help make a quick and tasty cheese sauce.

My kids can be picky, but chicken, pasta and cheese are ingredients I know they will always enjoy.  So I headed to Walmart to pick up some of the Philadelphia Cream Cheese with more fruit and vegetables.  I picked the Onion and Chive flavor because I love the delicate combination of flavors.

 

The cream cheese is easy to find in the dairy sections, and I like that they put the bagels right there too!  But this time I wasn’t looking for bagels, because I wanted to make a main dish for the family.

While my kids love pasta, chicken and cheese, they aren’t as enamored of vegetables like mushrooms and spinach.  I was hoping that the yummy cheese sauce would mask most of the vegetable taste, and sure enough it worked!

I was able to put this whole dinner together in about 20 minutes.  I started the water for the pasta, breaded the chicken and put it in the oven, and then made the simple cheese sauce which includes Philly Cream Cheese, onions, mushrooms, spinach and chicken broth.  By the time the chicken was baked the pasta and cheese sauce were ready to go, and dinner was on the table.

The sauce was creamy and tasted mostly of cheese, with some vegetable flavorings.  It complemented the chicken well, and the kids thought it was also good on the broccoli I served as a side dish!

Chicken in Cheesy Chive Sauce with Philly Cream Cheese

Ingredients
 

  • 1 lb chicken breast tenders
  • 1 box Panko Bread Crumbs
  • 1 lb Linguine
  • 1 Tablespoon olive oil
  • 1 small onion
  • 8 oz. mushrooms
  • 1/2 cup Philadelphia Cream Cheese with Chive and Onion
  • 1/2 cup Chicken broth
  • 2 cup spinach

Instructions

  • Preheat the oven to 450.
  • Coat the chicken tenders in the Shake and Bake and put in the oven for 20 minutes.
  • While the chicken cooks make the linguine and the sauce.
  • Chop the onions and mushrooms and saute in the olive oil for 10 minutes.
  • Add the cream cheese and the chicken broth and wisk to mix.
  • Put the spinach in and cook for another 5 minutes.
  • Top the pasta with the chicken and sauce.
