Easy Air Fryer Roasted Tomatoes

Air fryer tomatoes are sweet, delicious and bursting with fresh tomato taste. Roasting tomatoes concentrates the flavor so there is intense, sweet tomato in every bite.

The high heat of the air fryer chars the tomatoes which brings out the natural sugars and slightly caramelizes them. The end result is the tomatoes are extra yummy!

I’ve been making all kinds of different tomato recipes and these air fryer roasted tomatoes are one of the easiest and tastiest!

Key Ingredients

Tomatoes – All kinds of tomato work in the air fryer. My favorite kind is cherry tomatoes, because they are bite sized and extra sweet. But Roma or other plum tomatoes or Beefsteak tomatoes also work extremely well.

Olive oil – Use a good quality olive oil to complement the taste of the tomatoes. You don’t need a lot of oil, but a small amount will add flavor and help the tomatoes char nicely.

Spices – I use salt and a little bit of garlic powder. A minced garlic clove would also work well.

How to Air Fry Tomatoes

1. Slice

Larger tomatoes should be sliced in half. Even for small cherry tomatoes I usually cut them in half because it makes them cook fast.

2. Drizzle

Put the tomato halves in a bowl and drizzle them with the olive oil. Sprinkle on the salt and garlic powder and toss the tomatoes so they are coated in spices.

3. Air Fry

As the tomatoes air fry they will release a fair bit of juice. This means that the air fryer can be kind of messy after cooking them. 

If want you can put a piece of parchment paper in the bottom of the basket. You can buy perforated parchment paper specifically cut to fit, which results in minimal cleanup.

Put the tomato halves in the air fryer basket, spreading them out so they don’t overlap. Don’t overfill the basket.

My 5.8 quart Cosori air fryer has no problem fitting 1 pint of cherry tomatoes. But if all the tomatoes won’t fit then cook them in batches.

Air fry the tomatoes at 390 degrees F for 8-10 minutes. When they are done the tomatoes should have released a lot of liquid and be a little charred, but not blackened.

Larger tomato halves will need a longer cooking time than cherry tomatoes. Cook them at 390 degrees F for 20-25 minutes.

How to Serve Air Fryer Roasted Cherry Tomatoes

These roasted tomatoes are good on their own or as part of another dish. Here are some of my favorite serving ideas:

  • Add them to your favorite pasta dish
  • East them by the handful as a snack all by themselves
  • Use them in an omelet or scrambled eggs
  • Use them to make bruschetta
  • Add them to a salad
  • Use them in a stew

How long do roasted tomatoes last? 

They will keep in the refrigerator for about 5 days. You can also freeze them, where they will be good for about 6 months.

Tomatoes have lots of health benefits because they are full of vitamins and antioxidants, whether they are raw or cooked. Cooking increases the amount of some antioxidants which help fight cancer, making them even more healthy.

What tomatoes should I roast?

In general the juicier the type of tomato the better they taste after roasting. But freshness also matters when cooking tomatoes. Choose the freshest, ripe tomatoes you can find for optimal results.

Ingredients
 

  • 1 pint cherry tomatoes
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder

Instructions

  • Wash and dry the tomatoes. Slice the tomatoes in half if desired.

  • Put them in a bowl and drizzle them with olive oil. Sprinkle on the garlic powder and salt and toss to coat.

  • Put the tomatoes in the basket in a single layer. Air fry the them at 390 degrees F for 8-10 minutes (20-25 minutes for larger size tomatoes).

Notes

  • If roasting larger tomatoes air fry them for 20-25 minutes.
  • Use parchment paper in the air fryer basket to simplify cleanup.
