I enjoy cooking, but that doesn’t mean I want to spend hours in the kitchen making meals. I like to have quick and easy dinners most nights and save my more involved recipes for weekends. Pizza is a always a quick dinner, especially if you use store bought pizza dough.
This recipe for BBQ pizza can be ready in less than half an hour, and it is a nice change from boring pizza. After all pizza doesn’t always have to mean tomato sauce and mozzarella cheese!
Using up Leftover Pulled Pork
My family and I love pulled pork which we usually make by smoking a huge pork butt on our smoker for about 16 hours or by making Instant Pot pulled pork much more quickly. Either way make a lot of food, which means I have lots of pulled pork.
So I make many different meals with leftover pulled pork. Even if we have company over there is always leftover pulled pork! And as much as we love pulled pork we don’t want to eat it every day for a week. Pizza is a great way to disguise leftover pulled pork and make it seem like a totally different meal.
Even if you don’t have a smoker pulled pork is super easy to make in the slow cooker or Instant Pot. Pork butts are cheap so it is a great dinner to make and use in many different ways. You can also just buy cooked pulled pork in the refrigerator section of most grocery stores.
Toppings for BBQ Pizza
I topped this pizza off with chopped red onion, one jalapeno pepper and one poblano pepper. The peppers add a little bit of spice to the pizza without making it super spicy. If your family likes things a little more bland a red or green pepper would work just as well.
For cheese I used both cheddar cheese and queso fresco. Queso fresco is light and fresh and melts well. I didn’t want to put a lot of strong tasting cheese on the pizza and overwhelm the pork. I wanted the pork and BBQ sauce to be the stars of this recipe.
How to Make BBQ Pulled Pork Pizza
This recipe uses a couple quick and easy shortcuts, like using store bought pizza dough and store bought BBQ sauce. You could make your pizza dough from scratch, but I rarely do.
I find that store bought pizza dough usually is easier to shape and stretch. But if you are more of a purist than I am you could make your own dough. You could also buy a pre-made pizza shell or make this recipe on flatbread or naan.
But however you get your pizza dough, once you have it spread out on a pizza pan or cookie sheet the rest of the recipe is easy to assemble! First I spread the entire crust with BBQ sauce, using the back of a spoon to get it evenly distributed.
Then I broke the pulled pork up into small pieces and spread it out all over the pizza crust. I used about 1 cup of pulled pork, but you could use more if you like.
Next I sprinkled the pizza with the red onion and the jalapeno and poblano peppers. To make the barbecue pizza look fancier I sliced the pepper into rings instead of just chopping them. That is is the kind of small detail that makes the pizza look more like an artisan pizza. It doesn’t affect the taste any, but it does make for a nice presentation!
Finally I sprinkled the cheese over the whole pizza and added a little bit of cilantro. Then I followed the instructions that came with my pizza dough to bake my BBQ pizza.
