Gingerbread is a traditional holiday flavor, and one of my favorite. Just the smell of gingerbread is enough to evoke memories of Christmas. Gingerbread pancakes are a great way to enjoy the gingerbread flavor, because unlike crunchy gingerbread men these pancakes are soft and fluffy. These pancakes make a quick and easy holiday breakfast, perfect creating a new family tradition for Thanksgiving Day or Christmas.

The holiday season can be busy and stressful, so it is important to take moments out of each day to make special memories. In my family some of the best holiday season memories involve cooking, baking and eating with my children. It is fun to make easy dishes together and enjoy spending time with each other around the table.

Pancakes are excellent for this, because they are so easy to make. It takes only a few minutes to stir together the ingredients in a bowl and cook them on a piping hot griddle for the entire family to enjoy.

My kids love fluffy homemade pancakes, whether we have them for breakfast, lunch or dinner. Another great thing about pancakes is that it is easy to customize them and add different flavors and toppings.

Around the holidays pumpkin pancakes are a favorite and flavors like chocolate pancakes are eaten year round at my house! Of course we love to top our pancakes with classic maple syrup, but also we also experiment with toppings like fresh cherries, blueberry sauce and roasted apples.  The possibilities for flavor combinations are limitless.

How to Make Gingerbread Pancakes

Not every recipe has to be a gourmet creation. Lately I’ve been making more “cheater” recipes that start with a boxed mix or other help because I’m tired and busy.

Sure, I could pull out the flour, sugar, baking powder, locate the ginger which is probably in my spice rack, and make pancakes from scratch. But it seems a lot less intimidating to just take a box of cake mix, add a few ingredients and call it done. Especially when you are cooking with kids sometimes simple is best.

So for this recipe I went with simple, not gourmet. The recipe uses a boxed gingerbread cake mix as a base. You combine the cake mix with some water and an egg and stir it with a wooden spoon until the batter is smooth.

For me the hardest part of making the pancakes is waiting for the griddle to get hot enough to cook the pancakes. I have an old electric stove that needs to be replaced and it always takes longer than I think to heat up our square pancake griddle.

After the pancakes cook for a few minutes they are a pretty golden brown and the entire house smells like holiday gingerbread! I served the pancakes with whipped cream, which is always guaranteed to be popular in my house.

They also pair perfectly with warm maple syrup for a more traditional taste. A unique twist I tried with these gingerbread pancakes is topping them with fresh honeycomb, dripping with honey! This was very tasty, and the honeycomb kind of melted into the warm pancakes and added extra sweetness to the gingerbread.

Gingerbread Pancakes

Ingredients
 

  • 1 pkg 14.5 oz gingerbread cake mix
  • 1 1/4 cup water
  • 1 egg

Instructions

  • Mix gingerbread cake mix, water and egg in large bowl until batter is smooth.
  • Heat griddle or large skillet sprayed with cooking spray on medium heat. 
  • Pour batter onto hot griddle, using about ¼ cup batter for each pancake. 
  • Cook until bubbles form on top, then flip the pancakes over and cook until the second side is also golden brown.
  • Serve with syrup or honey.
