The recipe starts with two Kellogg’s® Eggo Thick & Fluffy Original Waffles. I topped one of the waffles off with a slice of cheese, two slices of ham and a fried egg. Then I put the second waffle on top to make tasty a waffle breakfast sandwich.

One of these sandwiches is quite filling – which is useful when you have teenagers in the house! If you have teens you know how much they eat, so I like having an easy breakfast that will fill my son up and not leave him scrounging for more food an hour later. For the rest of us I cut the sandwich into quarters to make 4 mini-sandwiches to share. Two or three quarters makes a filling breakfast for me. Serving these mini waffle breakfast sandwiches with a side of fruit or orange juice is a simple and quick breakfast for your family and will fuel lots of summer activities.

Ingredients

  • 2 Kellogg's® Eggo Thick & Fluffy Original
  • 1 egg
  • 1 slice American Cheese
  • 2 slice Ham

Instructions

  1. Fry an egg in a skillet on medium heat.
  2. While the egg is cooking toast two Eggo Waffles.
  3. Heat the ham in the skillet for a minute or two.
  4. Top one waffle with a slice of cheese, 2 slices of ham and the fried egg.
  5. Top the sandwich with the second waffle and serve.
