Now that Christmas is over it is time to start thinking about the New Year! And after a holiday season filled with indulgent cookies, pies and other treats it is also time to start thinking about better for you recipes, like this Strawberry Honeycomb Smoothie.

This smoothie uses an ingredient I’ve ever used before, honeycomb. Honeycomb is sweet and edible and using it adds a lovely aroma and texture to the smoothie. And while honeycomb is a unique ingredient it is not a hard to find one, since Don Victor® Honey is available at Walmart. It is located in the Hispanic Aisle and is easy to find! I love that Don Victor® Honey is raw, filtered honey, and not heated or processed in any other way.

Honeycomb can be eaten in many different ways. It is delicious on toast or on an English Muffin, especially with a little pat of butter. The heat from the toast softens the honeycomb so it mashes down and becomes soft and aromatic. I tried it on Gingerbread Pancakes last week and it was delicious, and the honey taste and smell enhanced the pancakes’ flavor.

In restaurants it is sometimes served with a selection of gourmet cheese and crackers – which would be a perfect appetizer platter for celebrating and ringing in the New Year! The possibilities are endless and it is a fun and tasty ingredient to experiment with.

It is all blended together with ice, which results is a thick and creamy smoothie with a delicious strawberry flavor. Strawberry Honeycomb Smoothie

Strawberry Honeycomb Smoothie

This tasty Strawberry Honeycomb Smoothie is perfect for a refreshing healthy snack.

Ingredients

  • 1 1/2 cup strawberries, fresh or frozen
  • 2/3 cup milk
  • 2/3 cup Greek yogurt
  • 2 Tablespoon Don Victor® Orange Blossom Comb Honey Globe Jar
  • 1/2 inch piece of honeycomb
  • 1 teaspoon vanilla
  • 6 ice cubes
  • strawberries and honeycomb to garnish

Instructions

  1. Put the strawberries, milk, yogurt, vanilla and ice cubes in a blender.
  2. Add 2 T of the Don Victor® Honey along with a 1/2 inch to 3/4 inch piece of the honeycomb.
  3. Blend until smooth.
  4. Add extra milk if the smoothie is too thick.
  5. Pour into glasses and garnish with sliced fresh strawberries and more honeycomb.
