My mother recently gave me her old cast iron skillet, so I have been enjoying making one dish recipes. This recipe features potato filled pierogies cooked with vegetables and sausage for an all in one stove top casserole.

This Easy Shrimp Pad Thai recipe is one of my family’s favorite dinners! It is quick to make, and can easily be made on a busy weeknight in less than 30 minutes so you can have dinner on the table quickly.

Pad Thai can seem like a complicated meal, but it is really not that difficult. The recipe is long, but almost all the work is just chopping up different vegetables. The key to making this Shrimp Pad Thai is to take the time to chop everything up and get all the ingredients ready to go because it cooks quickly. I like to put all the ingredients in bowls next to the stove, and then just dump them into the pan one at a time.

This time of year my family is very busy and we are always looking for ways to save time. It is important to my family to sit down together for a family meal most week nights, but that doesn’t mean it has to be an elaborate time consuming meal. Thai Shrimp Noodle Bowl

California Dried Plums are a delicious fruit that is perfect not just for snacking, but for cooking too. I recently made this Thai Shrimp Noodle Bowl recipe from the California Dried Plums Website, and it was a tasty dinner that the entire family enjoyed.

The recipe combines the dried plums with lots of vegetables like carrots, red peppers and scallions, and tops it all off with shrimp. I shredded the carrots and zucchini and cut all the ingredients finely for an easy to eat stir fry, suitable for using chopsticks.  I served it over rice noodles, and it was delicious.

I love to cook outside on the grill whenever I can. It is less cleanup for me, and the food just tastes better cooked over an open flame – especially steak! Last week I made these Easy Steak Fajitas for a quick and delicious summer meal.

The secret ingredient in these fajitas is the marinade. I marinaded them in Redd’s Apple Ale, which gave the meat a delicious subtle flavor. The enzymes in the alcohol help break down the tough fibers in the meat, making it more tender and giving it more flavor. I picked Apple Ale for the marinade because it is one of my favorites, and the sweetness of the apple flavor makes it extra good.

During Lent this year I have been making meatless soup recipes inspired by cuisines from around the world, and this week I made a delicious Mexican Tomato Soup with Corn Dumplings.

This soup combines traditional Mexican flavors like tomatoes, hominy, and chiles, and adds in bite sized corn dumplings for a soup that is rich and filling without any meat. This soup is quick and easy to make, and using shortcuts like RO*TEL diced tomatoes with green chiles makes it even easier!

Traditionally, Vatapa is a Brazilian stew made with shrimp or fish.  This week I decided to change it up a little bit and make it with mussels.

I was planning to use fish, but my grocery store had mussels on sale, and they were very fresh, so I changed it up and make Vatapa with Mussels.  Mussels are much cheaper than most seafood, so they make an economical choice. The broth for this stew is kind of unusual, as it is made from fish stock, beer and coconut milk.  It sounds like a strange combination, but it made for a rich broth that really enhanced the flavor of the seafood.

I usually see recipes for Guinness Stew with beef, but Guinness Lamb Stew is more traditionally Irish and it tastes great too.  The stew is better with a long slow simmering, so I like to add the potatoes and carrots for only the last 45 minutes, so they don’t get over cooked.

Shepherd’s Pie is an English recipe that is traditionally made with lamb. But here in the U.S. it is usually made with ground beef, which in my opinion makes it not nearly as tasty! So I make Shepherd’s Pie with lamb, and I use chunks of lamb too, so it is more like a delicious stew, with lots of meat and vegetables.

I am sure I am not the only person looking for healthy and delicious recipes this New Year!  For me the hardest meal to eat well at is lunch, because I get bored with the same old lunches day after day. So this week I put a different twist on basic tuna salad to make this tasty Southwestern Tuna Wrap.
