These easy air fryer twice baked potatoes are a creamy and cheesy side dish that is a perfect addition any meal. Hearty baked potatoes are filled with mashed potatoes, sour cream and cheese and topped with bacon and chives. And thanks to the air fryer you can cook these potatoes in only about 10 minutes!
One of the things I like best about cooking with my air fryer is how quick and easy it makes meal preparation. I enjoy cooking, but during the week I need simple meals that I can prepare quickly!
And twice baked potatoes are a perfect example of this. They are easy to prepare and seem much fancier than a regular baked potato.
And by cooking twice baked potatoes in an air fryer you can heat them up and serve them for dinner in only about 15 minutes.
Potatoes are always a big hit at my house and I serve them 3 or 4 times a week. Baked potatoes, mashed potatoes, salt potatoes, grilled red potatoes, potato salad – there are many, many ways to serve this versatile vegetables.
Potatoes are filling, inexpensive and delicious. Twice baked potatoes are fun because they are a way to serve potatoes that adds even more flavor and makes them look fancy.
Start with Baked Potatoes
The first step in making twice baked potatoes is to bake some potatoes. You can bake them in the oven, microwave or air fryer. I like to make these easy air fryer baked potatoes and use them as the base for twice baked potatoes.
When I make baked potatoes I usually make a few extra to turn into twice baked potatoes later in the week!
How to Make Twice Baked Potatoes
Once you have baked potatoes cut them in half and scoop out most of the potato insides. You want to leave the potato skin intact so it makes a nice crispy shell for the filling.
Then add the butter, sour cream and cheese and mash the potato insides up with a potato masher or a fork. I find if I use a mixer the filling gets over mixed and mushy. It doesn’t matter if if there are a few lumps in your final filling!
Once the mashed potato filling is creamy enough scoop it back into the potato shells and press it in. Sometimes it just fills the shells and sometimes it mounds up a little bit.
Cooking the Twice Baked Potatoes in the Air Fryer
My air fryer basket will hold 3 or 4 potato halves for making twice baked potatoes. It is important not to crowd the potatoes in the basket, since the air fryer needs good air circulation to work.
I cook the twice baked potatoes in the air fryer at 400 F for about 8 minutes, which heats the shells and the filling. Then I top them off with a some more cheese and bacon bits, because cheese and bacon make everything taste better.
Then the potatoes go back in the air fryer for another 2 minutes to melt the cheese and crisp up the bacon. The result is a delicious crispy potato shell filled with creamy mashed potatoes and topped with cheese!
The air fryer potatoes are ready quickly – but you do need to be careful when adding the cheese and bacon and taking the potatoes out of the air fryer.
The basket will be hot and it is easy to accidentally touch it and burn your hand or wrist. Use tongs or a spoon to take the twice baked potatoes out of the air fryer basket!

Cooking the Twice Baked Potatoes in the Oven
Of course you can bake this recipe for twice baked potatoes in the oven too. Simply bake them for 20 minutes at 350 F, add the cheese and bacon on top and then bake them for another 5 minutes. They will taste just as good, they just won’t be ready to eat as soon.
Make Ahead Twice Baked Potatoes
One of my favorite ways to simplify week night cooking is to make things that can be prepared ahead of time, and just popped in the oven to heat up at dinner. This lets me do my meal preparation when I have time, and not during the busy dinner hour.
These twice baked potatoes are perfect for this. You can bake a few extra potatoes when you make dinner one night and turn the extra ones into twice baked potatoes. Store the filled twice baked potatoes in the refrigerator for a quick side dish later in the week.
They can also be frozen for a few months if you are really planning ahead. If they are frozen thaw them overnight in the refrigerator before air frying or baking.
What to Serve With Twice Baked Potatoes
These tasty potatoes make a great complement to almost any main dish. I like to serve them with a lighter dinner idea like a this Turkey Corn Chowder or with a main dish salad like Southwestern Grilled Chicken Salad.
They are also hearty enough to make a meal on their own and I sometimes heat them up for a quick and delicious lunch!
These twice baked potatoes are quick to prepare, and yet seem like a fancy side dish, at least to my family! Using the air fryer to cook them helps me make dinner fast.

Air Fryer Twice Baked Potatoes
Ingredients
- 2 cooked baked potatoes
- 2 Tablespoon sour cream
- 1/2 cup cheddar cheese
- 1 Tablespoon butter
- 2 slices bacon cooked
Instructions
- Cut the baked potatoes in half and scoop out the insides into a bowl.2 cooked baked potatoes
- Add the sour cream, 1/4 cup of cheddar cheese and the butter to the bowl with the potatoes.2 Tablespoon sour cream, 1/2 cup cheddar cheese, 1 Tablespoon butter
- Mash the potatoes and other ingredients together with a potato masher until they have reached your desired consistency.
- Spoon the filling back into the potato shells, mounding it to fit as necessary.
- Refrigerate until ready to serve.
- When you are ready to bake the potatoes put them in an air fryer basket. Cook at 400 F for 8 minutes.
- Top the potatoes with the remaining 1/4 cup of cheddar cheese and bacon bits. Be careful not to touch the hot sides of the air fryer basket while you do this.2 slices bacon
- Return the potatoes to the air fryer and cook for 2 more minutes at 400 F to melt the cheese and crisp the bacon.

I’ve made there’s a half dozen times and o obviously love eating them. I particularly enjoyed and appreciated this recipe over others who say to either keep the scooped out potato pulp or toss it. Such a waste. This this should be everyone’s go-to twice baked potato recipe. I bake russet potatoes first using your air fryer baked potato recipe. Have you ever cooked Frozen Chicken Cordon Blue in the Air Fryer? The package says, not to cook in the air fryer or Microwave. Just wondering.
I’ve made it from scratch, but not cooked a frozen one. I’d follow the package instructions there, it probably won’t get warm enough in the middle before the outside is burnt.
