Memorial Day and summer are almost here, and that means it is time to fire up the grill and do some outdoor cooking! I want to branch out this year and make some new and different grilled recipes, like this recipe for Grilled Turkey Cutlets with Mango Salsa.

Turkey Cutlets are perfect for the grill, because they cook quickly and are tender and moist. This recipe uses a citrus marinade to flavor the cutlets and adds a Mango Salsa on top.  The resulting dish is a little bit sweet and a little bit spicy!

Popcorn is practically a staple food in my house – between me, my husband and our three kids it is a rare night when someone doesn’t decide to make popcorn!  This weekend we had a family movie night featuring spicy Srirach Lime Popcorn.  The popcorn was perfect for enjoying during an action filled science fiction movie!

The popcorn is easy to make using ACT II Butter Lovers’s microwave popcorn as a base.  I have made spicy popcorn before, but this is the first time I have added lime to popcorn and it really gave the popcorn a nice kick, and the mild lime flavor complemented the spicy hot sauce.

Maple Cream Cookies

The theme this week for the Creative Cookie Exchange is sandwich cookies – and I made these tasty Maple Cream Cookies.

The cookie part of this recipe is a mild spice cookie flavored with real maple syrup.  Maple is one of my favorite flavors, and although it is a traditional fall flavor I like it all year round.  Baking these cookies made the whole house smell delicious too.

Lemon Peeps Pie

Here is a cute way to use Peeps to make pies for Easter. I made a standard lemon pie, but instead of topping it off with meringue I used a marshmallow Peep!

During Lent this year I have been making meatless soup recipes inspired by cuisines from around the world, and this week I made a delicious Mexican Tomato Soup with Corn Dumplings.

This soup combines traditional Mexican flavors like tomatoes, hominy, and chiles, and adds in bite sized corn dumplings for a soup that is rich and filling without any meat. This soup is quick and easy to make, and using shortcuts like RO*TEL diced tomatoes with green chiles makes it even easier!

Vatapa with Mussels

Traditionally, Vatapa is a Brazilian stew made with shrimp or fish.  This week I decided to change it up a little bit and make it with mussels.

I was planning to use fish, but my grocery store had mussels on sale, and they were very fresh, so I changed it up and make Vatapa with Mussels.  Mussels are much cheaper than most seafood, so they make an economical choice. The broth for this stew is kind of unusual, as it is made from fish stock, beer and coconut milk.  It sounds like a strange combination, but it made for a rich broth that really enhanced the flavor of the seafood.

I usually see recipes for Guinness Stew with beef, but Guinness Lamb Stew is more traditionally Irish and it tastes great too.  The stew is better with a long slow simmering, so I like to add the potatoes and carrots for only the last 45 minutes, so they don’t get over cooked.

I love cooking with Guinness – whether it is a hearty Irish stew like Instant Pot lamb stew or a sweet treat like Guinness brownies the beverage adds flavor and excitement to many dishes.

This Guinness Bread is packed with flavor, and has an amazing moist texture. Since it is a quick bread you don’t have to mess around with proofing yeast, the carbonation in the Guinness Stout combines with the baking soda to make the bread rise.

Shepherd’s Pie is an English recipe that is traditionally made with lamb. But here in the U.S. it is usually made with ground beef, which in my opinion makes it not nearly as tasty! So I make Shepherd’s Pie with lamb, and I use chunks of lamb too, so it is more like a delicious stew, with lots of meat and vegetables.

To make a football shape I used a circular cookie cutter.  First I cut out a circle shape, and then used the same cookie cutter to go over half the circle and make it a football shape.

I am sure I am not the only person looking for healthy and delicious recipes this New Year!  For me the hardest meal to eat well at is lunch, because I get bored with the same old lunches day after day. So this week I put a different twist on basic tuna salad to make this tasty Southwestern Tuna Wrap.
